Ukraine is a country in Eastern Europe. It is the second-largest European country after Russia, which borders it to the east and northeast. It also borders Belarus to the north; Poland and Slovakia to the west; Hungary, Romania and Moldova to the southwest; with a coastline along the Black Sea and the Sea of Azov to the south and southeast. Kyiv is the nation's capital and largest city, followed by Kharkiv, Dnipro, and Odesa. Ukraine's official language is Ukrainian.

During the Middle Ages, Ukraine was the site of early Slavic expansion and the area later became a key centre of East Slavic culture under the state of Kievan Rus', which emerged in the 9th century. The state eventually disintegrated into rival regional powers and was destroyed by the Mongol invasions of the 13th century. The area was then contested, divided, and ruled by a variety of external powers for the next 600 years, including the Polish–Lithuanian Commonwealth, the Austrian Empire, the Ottoman Empire, and the Tsardom of Russia. The Cossack Hetmanate emerged in central Ukraine in the 17th century, but was partitioned between Russia and Poland, and absorbed by the Russian Empire. Ukrainian nationalism developed and, following the Russian Revolution in 1917, the short-lived Ukrainian People's Republic was formed. The Bolsheviks consolidated control over much of the former empire and established the Ukrainian Soviet Socialist Republic, which became a constituent republic of the Soviet Union when it was formed in 1922. In the early 1930s, millions of Ukrainians died in the Holodomor, a human-made famine. The German occupation during World War II in Ukraine was devastating, with 7 million Ukrainian civilians killed, including most Ukrainian Jews.

Ukraine gained independence in 1991 as the Soviet Union dissolved, and declared itself neutral. A new constitution was adopted in 1996. A series of mass demonstrations, known as the Euromaidan, led to the establishment of a new government in 2014 after a revolution. Russia then unilaterally annexed Ukraine's Crimean Peninsula, and pro-Russian unrest culminated in a war in the Donbas between Russian-backed separatists and government forces in eastern Ukraine. Russia launched a full-scale invasion of Ukraine in 2022. Since the outbreak of war with Russia, Ukraine has continued to seek closer ties with the United States, European Union, and NATO.

Ukraine is a unitary state and its system of government is a semi-presidential republic. A developing country, it is the poorest country in Europe by nominal GDP per capita and corruption remains a significant issue. However, due to its extensive fertile land, pre-war Ukraine was one of the largest grain exporters in the world. Ukraine is considered a middle power in global affairs, and the Ukrainian Armed Force is the fifth largest armed force in the world in terms of both active personnel as well as total number of personnel with the eighth largest defence budget in the world. The Ukrainian Armed Forces also operates one of the largest and most diverse drone fleets in the world. It is a founding member of the United Nations, as well as a member of the Council of Europe, the World Trade Organization, and the OSCE.     The intervention in the Kievan succession crisis of 1015–1019 by the Polish ruler Bolesław I the Brave was an episode in the struggle between Sviatopolk I ("the Accursed") and his brother Yaroslav ("the Wise") for the grand princely title of Kiev. It occurred when Sviatopolk's father-in-law Bolesław, ruler of Poland, intervened on Sviatopolk's behalf.

    The intervention was initially successful as Bolesław defeated Yaroslav's armies, and temporarily secured the throne for Sviatopolk. But when Bolesław withdrew himself and his army from Kiev, Sviatopolk was unable to retain his position, being defeated by Yaroslav in the following year. Berezovsky's place of birth and his father's name are known only from verbal accounts. He is traditionally thought to have been educated at the Hlukhiv Singing School [ru]; he may have also attended the Kyiv-Mohyla Academy, although this is uncertain. In 1758, he was accepted as a singer into the capella at Oranienbaum, before being employed at the imperial court of Catherine II in Saint Petersburg, where he received lessons from the Italian composer Baldassare Galuppi. In 1769, Berezovsky was sent to study in Bologna. There he composed secular works, including Demofonte, a three-act opera seria that was the earliest Italian-style opera to be written by a Ukrainian or a Russian composer. Ukraine officially adopted the UNESCO Convention and became an independent member on 12 October 1988, while still officially being a Union Republic of the Soviet Union (prior to its dissolution in 1991). As of 2023[update], there are eight World Heritage Sites listed in Ukraine, seven of which are cultural sites and one of which, the Ancient and Primeval Beech Forests of the Carpathians and Other Regions of Europe, is a natural site. The first site listed was "Kyiv: Saint-Sophia Cathedral and Related Monastic Buildings, Kyiv-Pechersk Lavra", in 1990. The most recent site listed was the Historic Centre of Odesa, in 2023. The site was immediately listed as endangered because of the 2022 Russian invasion, the sites of Kyiv and Lviv were added to the endangered list as well later in the same year. Three sites are transnational: the Wooden Tserkvas are shared with Poland, the Struve Geodetic Arc is shared with nine countries, and the Ancient and Primeval Beech Forests are shared with 17 countries. Prior to 2020, four cities in the oblast were designated as cities of regional significance (municipalities), which had self-government under city councils, while the oblast's remaining five cities were located amongst the oblast's eighteen raions (districts) as cities of district significance, which are subordinated to the governments of the raions. On 18 July 2020, an administrative reform abolished and merged the oblast's raions and cities of regional significance into five new, expanded raions. The five raions that now make up the oblast are Beryslav, Henichesk, Kakhovka, Kherson, and Skadovsk. After 24 February 2022, during Russia's full-scale invasion of Ukraine, all cities in the oblast were occupied by Russian troops, including the capital, Kherson, making it the only regional capital to be captured during the invasion. Following the 2022 Kherson counteroffensive, the oblast's territory to the west of the Dnipro river, including the cities of Beryslav and Kherson, was recovered by Ukraine, while the oblast's seven cities to the east of the river have remained occupied by Russian forces. For its contributions to the country's defense during the invasion, Kherson was awarded the honorary title Hero City of Ukraine in 2022. The destruction of the Kakhovka Dam on 6 June 2023 heavily impacted the region, with cities along the banks of the Dnipro downriver from the breached dam (Hola Prystan, Kherson, Nova Kakhovka, and Oleshky) experiencing flooding.     Borscht (English: /ˈbɔːrʃt/ ⓘ) is a sour soup, made with meat stock, vegetables and seasonings, common in Eastern Europe and Northern Asia. In English, the word borscht is most often associated with the soup's variant of Ukrainian origin, made with red beetroots as one of the main ingredients, which give the dish its distinctive red color. The same name, however, is also used for a wide selection of sour-tasting soups without beetroots, such as sorrel-based green borscht, rye-based white borscht, and cabbage borscht.

    Borscht derives from an ancient soup originally cooked from pickled stems, leaves and umbels of common hogweed (Heracleum sphondylium), an herbaceous plant growing in damp meadows, which lent the dish its Slavic name. With time, it evolved into a diverse array of tart soups, among which the Ukrainian beet-based red borscht has become the most popular.
